These organic matchas from Jagasilk fill a niche market with a product that at least meets a certain standard. But I'm very intrigued by the Japanese matchas and plan to learn more about them this spring. I've got Jagasilk at the top of my mind for the go-to place for good stock around here, and there's an Urasenke group in Seattle I'm hoping to learn more about the art from.
